I’m so incredibly honored to be blogging alongside not only one of my very favorite people but my mentor, 
Marguerite. This remarkable woman has taught me so much about life and friendship and I cannot thank her enough for her continued support!  

Where did all the time go? I know it’s important to stop and take the time to appreciate living each day one at a time, but I still find myself wondering what happened to my little Sofia? 

Fia, as we so often call her, is about to start her second year of kindergarten.


We sent her to an incredible pre-school that did wonders in preparing her for the next step. When the school later called to say she was ready, at 4 years old, to be in kindergarten my husband and I didn't hesitate to say "Okay... let’s do this." We knew if it didn't work out we could always put her back in pre-school.


The decision wasn’t hard because... well the teachers at her current school are absolutely amazing. I can’t say enough positive things about All Aboard Learning Express. They have truly loved and taught my daughter how to be an independent and smart little lady.

Don't get me wrong.. I still get the at least once a week-“Mommy I don’t want you to go to work” routine, which I know many of you can relate. The working mom guilt can be the worst sometimes...but the teachers help us get through it. Both my husband and I feel comfortable with them.. and they've done so much to help us that I can never say thank you enough. 

Raising a child does take a village and we are really lucky to have such great support. 

In a few weeks, Sofia will move on and become a student in the Chicago Public School system. We were extremely lucky that she got into a great school and I have no doubt she will do wonderfully. However, I’m dealing with the stress of watching my baby grow up, and move on to that next stage. 


Why doesn’t anyone tell you how hard this really is? Maybe because she’s an only child, the growing up is harder for me to deal with. Like many other parents, my husband and I don't have any other children to worry about or watch over. 

The uncomfortableness of it all is so scary for parents. She had her first sleep over this summer, and while it was at our neighbor's house... it was still a huge step for us. When I told her "Mommy isn't ready for this" she looked me straight in my eyes and said "it’s going to be okay... I've got this!"

So, I know on the first day of school I will be a mess, but I'll always remember her little voice saying "don’t worry Mommy, I've got this."

They grow up so fast and maybe it sounds like a cliche but don't forget to cherish every moment! Enjoy the last few days before the back to school craziness takes over!!

This is one of our family favorites!!! So Good-Enjoy!! 

Hawaiian Bread French Toast

Ingredients:
1 - loaf Original King's Hawaiian Round Bread
3 - eggs, beaten
1/2 - cup milk
1 - teaspoon vanilla extract
1/8 - teaspoon baking powder
1/4 - cup sugar
1/8 - teaspoon cinnamon
1/8 - teaspoon nutmeg
powdered sugar or syrup

Directions:
Slice the Kings Hawaiian bread into then cut each slice of bread in half. You can also get the loaf already cut at the store..(totally just as good) Lay the bread slices on plate 

Beat the eggs until smooth; add the milk and vanilla and blend; Add baking powder, sugar, cinnamon and nutmeg; blend until the sugar dissolves. Preheat slightly a buttered pan or griddle. Dip each piece of bread into the batter and cook for a few minutes. 

I put them in the oven on warm until ready to serve, they are so yummy!!!

don't worry - YOU'VE got this! this is a great moment you shared. And yes, you will be a mess on the first day of school ... but so will all the other moms (and dads)!

... and she does 'got this'. She got 'it' from great parents and a loving family. Super kid!
